The story of the Aviation

The Aviation appeared in 1916 in Recipes for Mixed Drinks by Hugo Ensslin, head bartender at New York’s Hotel Wallick – back when flying was still the great sensation. Its floral note comes from crème de violette, a liqueur that later all but vanished; even the Savoy Cocktail Book left it out in 1930.

Only when the liqueur became available in the US again from 2007 did the Aviation return in its original pale-sky hue.
