A Mexican agave spirit, mostly from Oaxaca, whose agave hearts are traditionally roasted in earthen pits – hence the smoky aroma. In the Oaxaca Old Fashioned and Naked and Famous it adds depth and smoke. Even a small amount in place of tequila changes a drink noticeably.
